Double Fudge Cake

Can someone say chocolate, chocolate and more chocolate?

This cake is just as delicious as it looks. 

It has a brownie like texture and is full of fudgy goodness!

It is topped with a delicious and creamy chocolate ganache.

Go ahead and pour yourself a tall glass of milk and put your chocolate craving to rest!

Ingredients

3 cups sugar

1 cup softened butter

1 cup softened margarine

1 ½ teaspoons vanilla extract

5 eggs

3 cups all purpose flour

1 cup cocoa, sifted

2 teaspoons baking soda

½ teaspoon salt

1 small box chocolate pudding (instant)

2  and 2/3 cups buttermilk (whole, NOT the nonfat kind)

1 cup chocolate chips

 

Ganache

9 oz chocolate chips (semi sweet or dark)

1 cup heavy cream

Directions

  1. In a large bowl, combine sugar, butter, and margarine and mix until creamy with a hand mixer.

  2. Add eggs one at a time and mix well.

  3. Add vanilla.

  4. In a separate bowl, combine cocoa and flour.  Use a wire whisk to ensure all clumps are out of the mixture.  Add salt, baking soda and chocolate pudding and whisk well.

  5. Begin adding the dry ingredients and alternate with the buttermilk until all has been combined well.

  6. Mix on medium for about one minute.

  7. Add 1 cup chocolate chips and incorporate well.

  8. Grease and flour a tube cake pan.  This is a crucial step, so don’t skip it!

  9. Pour batter into the pan and bake on 350 degrees for approximately 45-60 minutes. 

  10. After 45 minutes, check to see if it is done by inserting a toothpick or skewer into the center of the cake.

  11. Ovens vary in cooking times, so if the cake is not done after 45 minutes, continue baking and check again after a few minutes. 

  12. You will know it is done when the toothpick comes out clean.

  13. Allow this cake to sit in the pan for at least ten minutes before removing to a cake plate. 

  14. The cake should cool on a plate for about 30-40 minutes before icing.

  15. For the ganache:

  16. Heat the heavy cream for two minutes inside the microwave using a microwave safe bowl.

  17. Make sure the heavy cream has heated enough to create a slight film on top of it.

  18. Remove from the microwave and add the chocolate chips.

  19. Allow them to sit for a few minutes without disturbing.

  20. Stir the chips and cream until it forms a smooth and shiny ganache.

  21. Use a spoon to drizzle chocolate ganache over the top.
