Apple Cinnamon Quick Bread
This Apple Cinnamon Quick Bread is loaded with fresh apples and warm spices that make your house smell amazing when it is baking!
This is not too sweet, and is delicious all by itself, but if you want to kick it up a notch, just heat a slice up in the oven and slather it with butter! And, don't forget the coffee!
That is a southern thing, I believe, but everything is better with butter!
Ingredients
3 1/2 cups all purpose flour
2 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon allspice
1 teaspoon baking soda
2 1/4 cups sugar
1 teaspoon vanilla extract
4 eggs
1 cup oil
3 cups apples chopped finely or grated
For the icing:
1 1/4 cups powdered sugar
2+ tablespoons heavy cream
Directions

Mix the wet ingredients together using a hand mixer.

Add the dry ingredients a little at a time until it is mixed well.

Pour into a prepared tube pan or rectangular baking pan. Make sure the pan is greased and floured well to prevent sticking.

Bake on 325 degrees for about one hour, but begin checking after 40 minutes because some ovens bake faster than others. Use a toothpick to ensure the center is done before removing from the oven.

In a small bowl, mix the powdered sugar with the heavy cream until it is pasty, almost the consistency of thick cake icing.

While the cake is still warm, slather the icing over the top. As the icing melts, it will begin to drip over the sides.
