Candied Yams
This yam recipe belonged to my maternal grandmother. My mama taught me how to make these using a cast iron skillet; however, they may be cooked inside any type of skillet on top of the stove.
These are deliciously sweet and buttery!
Ingredients:

3-4 large sweet potatoes, peeled and sliced into 1/2 inc slices

3 tsp ground cinnamon

1 stick butter (1/2 cup) If you substitute with margarine, use a high quality margarine like Land O Lakes. It has a higher percentage of oil and fewer additives.

1/2 cup water

1 cup brown sugar

2 tsp vanilla
Directions:

Melt the butter inside the skillet over medium heat.

Add the potato slices.

Sprinkle sugar and cinnamon over the top.

Add the water and vanilla.

Cover with a lid.

Cook on medium heat until the sweet potatoes are tender.

Stir periodically, but don't over do it because the potatoes will begin to break apart if they are stirred too often.
