Pan Fried Okra
1 - 28 oz bag of frozen okra (you may use fresh okra, if available)
1 tsp salt
1/2 tsp black pepper (more if you would like)
2 tablespoons flour
Olive oil to coat the bottom of a cast iron skillet
Combine the okra with the seasonings and flour.
Heat the oil in a cast iron skillet and add the okra.
Cover for about 8-9 minutes and cook over medium heat without disturbing.
Remove the lid.
Gently turn over the okra in small sections.
Continue cooking, checking every 3-4 minutes.
Don't continuously stir this, just flip in sections.
Stirring will make this a slimy mess! :)
Cook until it has reached the desired amount of caramelization.
Remove from heat and serve.
