Pan Fried Squash
Ingredients
4-5 yellow squash
1 large onion, diced
1/2 tsp salt
1/2 tsp pepper
2 tablespoons flour
Olive oil to cover the bottom of a cast iron skillet.
Instructions
Cut the ends off of the squash and slice horizontally.
Remove as many of the seeds as possible. (The seeds can make this a little slimy.)
Cut into bite size pieces and place in a large bowl.
Add the diced onion.
Add the seasonings and flour.
Toss to coat well.
Once the oil is heated, add the squash mixture to the pan.
Cover for about 8-9 minutes and cook over medium heat without disturbing.
Remove the lid.
Gently turn over the squash in small sections.
Continue cooking, checking every 3-4 minutes.
Don't continuously stir this, just flip in sections.
Stirring will make this a slimy mess! :)
Cook until it has reached the desired amount of caramelization.
Remove from heat and serve.
