Potato Salad
5 lbs potatoes, peeled and diced
6 eggs, boiled
1/2 large red onion diced
1/2 cup sweet relish
1 1/2 tsp salt
1 tsp black pepper
1 1/2 cup mayonaise
2 tsp whole grain mustard (optional)
Boil potatoes in a large pot until tender. Do not overcook or you will have mashed potato salad.
In a bowl, combine boiled eggs that have been chopped finely, diced onion, sweet relish salt, pepper, mayo and mustard. Mix well.
(It is important to mix these ingredients well before adding the potatoes to avoid mashing the potatoes.)
Drain the potatoes and pour the mixture over the top and stir gently to coat.
